I am a major lobster lover.
A local guy who has been working on our house and is also a fisherman and Clam Bake party expert, dropped off 2 pounds of fresh lobster meat this weekend.
His buddy is the local fishmonger.
The lobster was superb.
I melted 4oz butter in a cast iron skillet, added fresh ground pepper, a squeeze of fresh lemon, the lobster meat and sauteed for about 5 minutes allowing the butter to absorb into the lobster meat.
I served it with a baked potato and arugula salad with avocado, lemon juice and extra virgin olive oil. I peppered the baby arugula before adding any ingredients.
Toss and you are done.
I fed three and have plenty of lobster left over.
It is absolutely fabulous.
