Holiday weekends are a great time to relax over breakfast or brunch.
My daughter whipped up these delectable pancakes last weekend.
Believe it or not the pancakes are not only delicious, but healthy for you, low in fat, high in protein and fiber.
Here is the quick and easy Gluten Free Protein Pancakes recipe (makes 6-7 silver dollar sized pancakes per serving):
2 eggs
1/2 cup cottage cheese (regular or lactose free)
1/2 cup rolled oats
Pinch of salt
Dash of vanilla (optional)
1 TB Chia seeds – optional, but essential
Mix together in a blender except for the chia seeds which are added after blending. (Please note: Chia seeds are highly nutritious, offering fiber, omega-3 fatty acids, protein, calcium, phosphorus, manganese and are rich in antioxidants).
Heat pan with a thin layer of Avocado oil. Drop in batter. I prefer the small pancakes. You can opt for any size you desire.
Cook until batter begins to bubble and flip. Add more oil as needed. Cook until golden brown. Serve with maple syrup.
