Not in the mood to spend time cooking after the long holiday weekend?
Try this quick, easy, totally improvised, absolutely delicious tomato sauce recipe.
Tomato Sauce Recipe:
1 dozen Campari on the vine Tomatoes (can be over ripe)
1/4 cup Avocado Oil (EVOO does not cook well on high heat)
Splash of white wine any variant or price point
Fresh Ground Pepper
Kosher Salt to taste
Optional handful of Fresh Basil Leaves
Rinse tomatoes (no need to cut) and place all ingredients in a Pyrex casserole dish.
Bake at 450 degrees until tomatoes start to char.
Remove from oven and cool.
Place all ingredients in a blender, add a splash of half and half and blend until smooth.
That’s all, folks.
Makes approximately 4 servings and cooks in 30 minutes or less.
Enjoy over pasta, chicken or any desired combination.
By the way, the Campari is a hybrid tomato that is only about 20 years old. They cook well and they have a high sugar content and low acidity, making them very versatile. Keeping tomatoes on the vine extends their shelf life.
